Ingredients
1/2 c butter or margarine
1 c plus 2 tbsp flour
1/4 c confectioners sugar
2 eggs, slightly beaten
1 c granulated sugar
3 tbsp lemon juice
1/4 tsp salt (add only if using unsalted butter)
1/4 tsp cream of tartar (optional)
Grated rind of 1 lemon
Preparation
Mix together the butter of margarine, 1 cup flour, and confectioner’s sugar. Place into an 8 inch square pan and press with fingers to form an even layer of crust. Bake 15 minutes at 350F. Mix eggs, granulated sugar, lemon juice, salt, remaining flour, and grated lemon rind.
Bake 20 minutes
Sift confectioners’ sugar over lemon bars when cooled
