Ingredients
1 lb scallops
1/4 cup olive oil
1 tsp marjoram
salt
pepper
butter
1 tbs mustard
1/4 cup balsamic vinegar
1 large garlic clove, pressed
1 tbs sugar
salt pepper
1/3 cup olive oil
salad greens
Preparation
Put ridge pan in broiler. Turn broiler on high for 15 minutes.
Marinate scallops in olive oil, salt and pepper.
When pan is super hot, take out and rub butter over the ridges. Place scallops on pan and quickly put in broiler for 3 minutes. Turn scallops over, cook for 3 more minutes.
Do not overcook!
Mix vinaigrette, starting with mustard, vinegar, garlic and sugar first. Then add olive oil in a steady stream while continuing to mix. Add salt and pepper to taste.
Serve scallops over salad with vinaigrette on top or on the side.
Serve with sauce from pan and lemon.
