Ingredients
1 cup soft tofu,
8 ounces baby spinach,
4 fresh ripe nectarines,
3 fresh ripe tomatoes,
1/4 cup red onions,
2 clove of garlic,
2 avocados,
5 tablespoons of olive oil,
1 tablespoon of red wine vinegar,
1 tablespoon of honey,
Salt and Pepper.
Preparation
With a fork mash tofu and avocado with 1 clove of finely chopped and crushed garlic, add salt and pepper,and set aside. Chop tomatos, red onions and nectarines, place in a bowl and set aside. Mix olive oil and vinegar with honey, 1 clove of mashed garlic, salt and pepper and set aside. Place baby spinach leaves on each plate, add red and orange tomatoes and nectarines, then sprinkle spiced tofu particles, and drizzle dressing.
