Ingredients
1 Lb of Ground Beef
4 Lg Vine Tomatoes
1 Bunch of Cilantro
1/2 Lg Onion
3 Cloves Garlic
1 Can Black Beans
1 Can Refried Black Beans
3 Jalepenos
3 Assorted Dried Hot Peppers (which ever are your favorite)
1 Block Jack cheese (6x3x1)
1 Block Chedder Cheese (6x3x1)
1/2 cup Basalmic Vinegar
Olive Oil
Salt
Pepper
Preparation
Pre-work
- chop garlic and onions finely
- Chop tomatoes into little cubes
- Chop cilantro finely
- chop dried peppers very finely
- chop jalepenos finely
- Shread Cheese
Mix
- Heat a large sauce pan on medium, add olive oil.
- Add Onions and Garlic. Simmer until softened.
- Add ground beef
- Add basalmic vinegar and a splash of olive oil.
- Add black beans, jalepanos and various peppers.
- Add Salt and Pepper to taste.
- Cook until ground beef is grey.
- Add refried black beans, mix in.
- Pour in bottom of cooking bowl (recomend glass cassarole dish)
- Add layer of both types of cheese.
- Bake at 250 until cheese is bubbling.
- Add layer of cilantro and tomatoes.
- Add layer of both types of cheese.
- Sprinkle cilantro on top.
- Bake until cheese is bubbling on top.
