Ingredients

2 cups of rice

4 pieces of washed, square-cut banana leaves

4 red onions sliced

5 dried chillis

1 small cup of dried anchovies

A pinch of salt and sugar

3 shallots

2 garlics

3 tablespoonfuls of prawn paste

2 eggs (boiled and sliced into four halves)

1 can of coconut milk

1 cucumber sliced

Preparation

First, cook the rice by adding water, salt and coconut milk

Meanwhile, blend a mixture of shallots, garlics, prawn paste and dried chillis until they mix evenly and turn into a smooth paste. You cna put more of the prawn paste if you like. Then, heat up a pan and cook the paste. Add in the sliced onions

Next, fry the dried anchovies until they turn crispy and brown

Mix the cooked paste with the anchovies

Scoop the cooked rice on the banana leaves, and pour the paste on top of the rice

Place a few sliced cucumbers and hard-boiled egg on the side

Ready to serve.
