Ingredients
1 medium cucumber, peeled, seeded, sliced thin and chopped
1/2 cup red, yellow or orange peppers, sliced thin and chopped
12 oz spaghetti
2 Tbsp dark sesame oil
1/2 cup tahini
2 Tbsp sugar
3 Tbsp soy sauce
2 Tbsp minced ginger or more to taste
1 Tbsp rice or white wine vinegar
salt and pepper to taste
1/2 tsp red pepper flakes or a couple of dashes of hot pepper sauce.
1/4 cup scallions
1-2 handfuls of mint, torn or sliced.
Preparation
Cook pasta until done. Whisk together sesame oil, tahini, sugar, soy sauce, rice vinegar and hot pepper sauce. Thin with hot water to the consistency of heavy cream.
Rinse noodles under cool water. Drain completely. Add peeled, chopped cukes, peppers, ginger, and stir in sauce to coat. Add a handful or two of fresh julienned mint and mix thoroughly. Add salt and black pepper to taste. Top with scallions. Chill if you have time!
