Ingredients

4 eggs

1 pound light brown sugar

1 stick soft butter

2 cups chopped pecans

1 teaspoon vanilla

2 premade pie crusts

Preparation

Preheat oven to 325 degrees F.

Mix ingredients well and pour into unbaked pie crusts. Arrange some unbroken pecan halves on the top to make the finished pies prettier.

Bake at 325 for 35-40 minutes. You’ll probably need to cover the edges of the pie crusts to keep them from burning before the filling is done. The center should just barely jiggle when done.
