Ingredients
1-10 lbs bag potatoes
1/2 cup olive oil
4 oz jar of crushed garlic
2 stalks leeks
2 red onion ( for color)
2 lbs bacon
Preparation
Preheat oven to 400 degrees Peel potatoes- cut potatoes into 8ths. arrange single layer in roasting pan . Cover with 1/2 of the olive oil. SAVE SOME FOR LATER Add garlic —- Peel onions- slice each onion- add ontop on potatoes. Cut leeks- Arrange on top of potatoes. Add rest of olive oil- gently mix Bake for 1 hour - toss after 40 mins.
In seperate cookie sheet - cook bacon until crisp/ Add warm bacon to potatoes and serve — So easy Even I can make this ….
