Ingredients
2 cup sugar
1 ½ cups vegetable oil
4 eggs
2 1/4 cups flour
2 teaspoon salt
2 teaspoons soda
4 teaspoons cinnamon
4 cups coarsely grated raw carrots
1 ½ cups chopped walnuts
1 cup raisins
Frosting:
1 - 8 ounce package of cream cheese
1/4 cup butter
2 teaspoon vanilla
1 package (1 lb) powdered sugar
Preparation
Sift flour, salt, soda and cinnamon. Mix together sugar, oil and eggs. Combine dry and wet ingredients. Mix in carrots, nuts and raisins. Bake at 325 degrees for about 1 hour or until done. Can be made in either 9" round pans or 9" X 12" pan greased and floured pans.
When cooled, frost.
Frosting: Bring cream cheese and butter to room temperature. Mix with blender on low-medium speed cream cheese, butter and vanilla. Add powdered sugar gradually until you have the consistency you want for the frosting.
