Ingredients

2 dozen LITTLE neck clams..the smaller the better

1 cup fresh grated italian bread

6 tablespoons freshly chopped parsley

4 tablespoons freshly chopped garlic

2 tablespoons freshly chopped oregano

Juice of one fresh lemon

salt and pepper to taste

1/2 cup of good olive oil

water to moisten if needed

Preparation

Open fresh clams… Mix all ingredients except water in a bowl…..add enough water to thoroughly moisten mixture….I typically use about 1/3 of a cup…use a teaspoon and mold a rounded teaspoon of mixture over clams…place on a cookie sheet..Heat oven to 375…before cooking (aproximately 25 minutes) drizzle a little olive oil over clams to moisten more…enjoy
