Ingredients

1 large jicama, peeled and julienned

1/3 cup orange segments

1/3 cup blackberries

1/4 cup toasted pecan pieces

fresh-grated parmesan cheese

pear salad dressing (or any fruit-based dressing)

lettuce, optional

Preparation

Combine jicama strips, orange segments and blackberries onto a salad plate. Top with toasted pecans. Shave some parmesan on top and drizzle with the pear dressing. (See note above concerning substitutions.)Looks pretty and even tastier served in lettuce cups!
