Ingredients

Filling:

32 ounces cream cheese

1 cup sugar substitute

1 teaspoon vanilla extract

1 teaspoon lemon juice

4 eggs plus 1 egg yolk

3 tablespoons sour cream

Crust:

1 1/2 C Graham cracker crumbs

2 tablespoons butter

Preparation

To prepare Crust: Crush or process graham crackers in food processor until crumbs are formed. Transfer to bowl and mix melted butter throughout. Press into bottom of greased springform pan. Put in refrigerator to set while preparing batter. To prepare Cheesecake: With an electric mixer, combine the cream cheese and sugar substitute at slow to medium speed, scraping sides often. Add all other ingredients except eggs. When completely mixed (with no lumps), add the eggs and egg yolk, one at a time, beating very slowly. When eggs are incorporated, do not mix any more. Pour the mixture into 10" springform pan. Bake at 300 F for 55min Cool 3+ hours before putting in refrigerator.
