Ingredients
I fresh potato per “pancake” of hash browns, skinned and shredded
Onion
Sal and pepper with 4 OZ bacon fat ( for crisping)
Preparation
Skin and press water from fresh potato. A salad spinner helps but finish off with a dish towel. Mix in diced onion, salt and pepper. Meanwhile, heat fat in cast iron skillet on medium. Place potato patty in center of pan fry until golden brown (8 minutes per side). Turn and repeat. Serve fried egg on top and enjoy.
