Ingredients
2 tbsp olive oil
1 medium onion, chopped
1 large green pepper, chopped
2 - 3 jalapenos, chopped
4 cloves garlic, crushed and chopped
1 cup pale beer, vegetable broth, or water
1 32oz can crushed tomatoes
1 14oz can black beans
1 14oz can dark red kidney beans
1 14oz can light red kidney beans
1 14oz can vegetarian refried beans
2 tbsp Costco taco seasoning
1 tbsp ground cumin
2 tbsp ancho chili powder
1 tablespoon Tabasco coarse salt to taste
1 packet sazon
1 tsp achioto powder
1 tbsp adobo powder
3 bay leaves
1 tsp cayenne chili pepper powder
Preparation
- Over moderate heat, add oil to a deep pot and combine onion, peppers, and garlic. Saute until onions are starting to become golden.
- Deglaze pan with beer, broth, or water.
- Add tomatoes, black beans, dark and light red kidney beans, stirring to combine.
- Add all the seasonings to the chili except for salt.
- Thicken chili by stirring in refried beans.
- Simmer over low heat about 30 minutes, stirring frequently to avoid scorching.
- Taste the chili and add salt to your liking. Simmer 10 minutes longer.
