Ingredients

1 TB cornstarch

2 teaspoons chili powder

1 teaspoon salt

1 teaspoon smoked paprika (or plain)

1 teaspoon sugar

1 teaspoon chicken buillon

1 teaspoon garlic salt

1/4 teas crushed red pepper (opt)

1/4 teas cumin

2 boneless chicken breasts

1/3 c water

1-2 red or green bell peppers cut up

2 onions, diced

Preparation

  1. mix dry ingredients in small bowl 2.heat 1 teas oil (or non stick spray) and stir fry the onion and bell peppers til translucent. set aside
  2. cook chicken strips in sprayed skillet sprinkle with 1/2 of the dry seasoning mix - when chicken is opaque add in peppers and onion mix and add more seasoning if desired. serve in warmed corn tortillas.

to warm tortillas, wet one at a time, squeeze a little lime juice or rub with 1/2 lime (opt) and place in sizzling pan sprayed with oil, flip over when golden on bottom and sprinkle with kosher salt.

serve with shredded lettuce, green sauce, a bit of grated cotija (or other cheese), sour cream, etc.
