Ingredients
1-2 T Dijon Mustard
1 Garlic Clove Grated
White or Red Wine Vinegar
Olive Oil
Salt and Pepper to taste
Pinch of Herb d’Provence
Handful of chopped Parsley
Fresh Baked Croutons large chunks
5 Big Tomatoes cut into chunks
1/2 Red Onion sliced thin
1 Large Cucumber cut into chunks
1 Container of Boccacino Mozzarella
Large bunch of basil torn
Preparation
Combine top list of ingredients to make vinaigrette. Set aside.
Combine bottom list of ingredients in large bowl. Layer neatly and seal away vinaigrette separately if transporting in order to avoid a soggy salad. Mix all ingredients with vinaigrette and let sit for 30-45 minutes so that croutons can soak up all of the moisture.
