Ingredients

2 cups rice,

3 cups low sodium chicken broth,

1 can “Rotel” diced tomatoes with lime and chiles,

1 can “Healthy Choice” tomato soup,

1 small chopped onion,

2 crushed garlic cloves,

2 TBSP olive oil or butter,

Cilantro for garnish

Preparation

Heat oil or butter and saute rice 2-3 mins over med heat. Add garlic and onions. Saute another 2 mins.(add 1 TBSP of broth at a time if rice becomes dry). Add broth, soup and Rotel and simmer 25 mins. Garnish with cilantro.
