Ingredients
1 c. whole wheat flour
1 c. all purpose flour
2 T. sugar
5 t. baking powder
3/4 t. baking soda
1/4 t. salt
2 eggs
2 c. buttermilk
1/3 c. melted butter or vegetable oil
1 t. pure vanilla extract
Preparation
Preheat griddle to medium high. Sift dry ingredients together in a medium bowl(up to three times for the lightest, fluffiest result!). In a large bowl, whisk together eggs. Add remaining wet ingredients and mix well. Add the dry ingredients to the wet mixture, in three parts. Mix together well, but do not over mix (this will result in a tough pancake).Use approximately ¼ cup of batter for each pancake. When bubbles appear, flip pancake. Cook on other side for approximately 3 minutes. Serve and enjoy with real butter and real maple syrup! Easily serves 10 people, two large pancakes.
