Ingredients
½ Pound Bacon
1 Large Sweet Onion; Chopped
5 -10 Pounds Potatoes; Cubed into Bite Sized Pieces
2 Tbsp. Parsley
½ to 1 Cup DRY Sherry
1 Tbsp. Nutmeg
2 Pints Half & Half or heavy cream
Salt & Pepper to Taste
Preparation
Fry bacon; remove from pan. Crumble; set aside.
Brown onion in drippings until translucent.
Add potatoes and brown, stirring frequently. Barely cover with water. Add salt and pepper to taste; cover pan and cook until potatoes are just tender. Add parsley and nutmeg.
Add Half & Half, sherry and bacon crumbles. Turn heat to low; simmer for 15 minutes. Adjust salt and pepper.
