Ingredients

1 tbl. olive oil

1 med. onion-chopped

5 cloves garlic-minced

1 tbl.cumin

1/2 tsp.cayenne pepper

1 jalapena pepper-minced

1 lb. black turtle beans-soaked overnight

8 c. vegetable broth

salt and pepper to taste

chopped scallions-optional

Preparation

Heat oil in a large pot.Add onion and garlic and cook until onion is translucent.Add spices and cook through.Add jalapeno,drained beans and broth.Bring to a boil, then reduce to a simmer.Cook covered about 1 1/2 hours or until beans are tender.
