Ingredients
3/4 cup sugar
3 tbsp tapioca
1/4 cup water
4 cup fresh blueberries (or frozen)
1 tbsp lemon juice
1 10" pastry shell, double crust
Preparation
Combine first 4 ingredients together in a large pot. Cook, stirring, over medium heat until thick and glossy in appearance. Add lemon juice. Stir again. Fill pastry shell, cover with pastry. Bake at 400 for 40-50 minutes.
