Ingredients

3 pounds small red potatoes

2 yellow onions

3 T olive oil

2 T whole-grain mustard

salt & freshly ground pepper

chopped parsley, flat leaf

Preparation

Preheat oven to 450F.

Cut potatoes into halves or quarters. Remove ends of onions, peel, and cut them in half lengthwise, then slice lengthwise. Put potatoes and onions in a large bowl.

In a small bowl whisk olive oil, mustard, salt and pepper. Pour over potatoes and onions and toss to mix. Transfer to a sheet pan and bake for 50-60 min. or until potatoes are browned on the outside and tender on the inside.
