Ingredients

36 cucumbers 1 1/2" to 2 1/2" diameter

1 large cauliflower head

6 green tomatoes

4 cups pickling onions (pearl)

3 green sweet peppers

3 red sweet peppers

1 cup salt

5 Tbsp flour

1/2 cup prepared mustard

1 Tbsp turmeric

1-2 cups sugar

5 cups vinegar

Preparation

Wash and prepare vegetables: Cut cucumbers into 1/2 inch slices, cauliflower into small pieces, and tomatoes into wedges. Scald and peel onions. Remove pepper seeds & cut into thin strips. Dissolve salt in 1 gallon of water. Pour over vegetables. Let stand 12 hours. Rinse then drain vegetables Mix flour, mustard, and turmeric then add water a bit at a time until it makes a smooth sauce. Add sugar and vinegar. Cook until sauce thickens enough to coat the stirring spoon. Add the vegetables and simmer for 15 minutes. Pack into hot jars while hot. Process pint jars in hot water bath for 10 minutes. Remove and cool jars.
