Ingredients

3 lbs mussels, cleaned

2 T olive oil

4 oz chorizo, sliced

1 onion, chopped

4 cloves garlic, chopped

1 C white wine

1 T sherry vinegar

1 28 oz can, chopped plum tomatoes

3 T chopped parsley

1/2 t red pepper flakes

salt and pepper to taste

Preparation

heat oil and litely brown chorizo. add onion,garlic and flakes. cook until soft. add wine and vinegar. Boil until almost evaporated. Add tomatoes bring to boil for abt 3-5 minutes. Add mussels. Cover and Cook for abt 8 min or until opened. Serve in soup bowls with lots of good bread
